Chicken with almond cream

A simple, creamy dish full of flavor. Almond cream adds a smooth texture and a slightly toasted note that pairs perfectly with the chicken. Ideal for a balanced meal that’s easy to prepare for everyday cooking.
Ingredients:
- 2 chicken breasts or 4 boneless thighs
- 2 tablespoons of almond cream
- 1 onion
- 1 clove of garlic
- 200 ml of chicken stock
- 1 tablespoon of extra virgin olive oil
- Salt and pepper to taste
For the topping (optional)
- Sliced or chopped almonds
- Fresh parsley
Preparation:
- Cut the chicken into medium-sized pieces and season with salt and pepper to taste.
- Finely chop the onion and garlic.
- In a large skillet, add the olive oil and cook the chicken until browned on the outside. Remove and set aside.
- In the same skillet, sauté the onion and garlic until soft.
- Add the chicken back in and pour in the stock. Cook over medium heat for a few minutes.
- Stir in the almond cream and mix well until you get a creamy sauce.
- Cook for a few more minutes until the sauce thickens slightly.
- Serve hot and, if desired, top with chopped almonds or parsley.
