Pollo con crema de almendra

Chicken with almond cream

A simple, creamy dish full of flavor. Almond cream adds a smooth texture and a slightly toasted note that pairs perfectly with the chicken. Ideal for a balanced meal that’s easy to prepare for everyday cooking.

Ingredients:

  • 2 chicken breasts or 4 boneless thighs
  • 2 tablespoons of almond cream
  • 1 onion
  • 1 clove of garlic
  • 200 ml of chicken stock
  • 1 tablespoon of extra virgin olive oil
  • Salt and pepper to taste

For the topping (optional)

  • Sliced or chopped almonds
  • Fresh parsley

Preparation:

  1. Cut the chicken into medium-sized pieces and season with salt and pepper to taste.
  2. Finely chop the onion and garlic.
  3. In a large skillet, add the olive oil and cook the chicken until browned on the outside. Remove and set aside.
  4. In the same skillet, sauté the onion and garlic until soft.
  5. Add the chicken back in and pour in the stock. Cook over medium heat for a few minutes.
  6. Stir in the almond cream and mix well until you get a creamy sauce.
  7. Cook for a few more minutes until the sauce thickens slightly.
  8. Serve hot and, if desired, top with chopped almonds or parsley.
