Cookies with cashew cream and carob

A very easy homemade cookie with a deep flavor thanks to cashew and carob spread. The combination of butter and nut cream creates a soft interior texture with a slightly crunchy exterior. Perfect to accompany coffee or enjoy as a sweet treat.

Ingredients:

  • 120 g butter
  • 1 egg
  • 200g Cashew and carob spread
  • 1 pinch of salt
  • 1 g of baking powder or chemical leavening agent
  • 180 g flour
  • 30g sugar or sweetener

Preparation:

  1. Preheat the oven to 180 °C.
  2. In a bowl, mix the butter with the sugar or sweetener until creamy.
  3. Add the egg and mix well until incorporated.
  4. Stir in the cashew and carob spread and mix until you have a homogeneous mixture.
  5. Add the flour, baking powder and pinch of salt and mix until a uniform dough forms.
  6. Shape small balls with the dough and place them on a baking tray lined with parchment paper.
  7. Slightly flatten each ball with a fork to shape the cookies.
  8. Bake for 10 minutes at 180 °C. Let cool before serving.
