Crepes with almond cream and cinnamon

A simple and delicious recipe to enjoy healthier crepes at home. The almond and cinnamon spread adds creaminess and a mild flavor that pairs perfectly with the aromatic touch of cinnamon. Ideal for a special breakfast or a balanced snack.
Ingredients:
- 1 egg
- 80 g oat flour
- 200 ml milk or plant-based drink
- 1 teaspoon mild olive oil or coconut oil (for the pan)
- Almond and cinnamon spread
- Toppings: fruit to taste, ground cinnamon, another nut butter
Preparation:
- In a bowl, mix the egg, oat flour, milk or plant-based drink, and one tablespoon of almond and cinnamon spread. Whisk well until you have a light, lump-free batter.
- Heat a nonstick pan over medium heat and add a small amount of oil to prevent the crepes from sticking.
- Pour a small amount of batter into the hot pan and spread it into a thin layer. Cook for 1–2 minutes on each side, until the crepe is lightly golden. Repeat with the remaining batter.
- Spread each crepe with almond and cinnamon spread while still warm so it softens slightly.
- Fold or roll the crepes and finish with an extra drizzle of almond and cinnamon spread, a pinch of cinnamon, and fresh fruit if desired.
