Poke bowl with almond and coconut cream

A fresh, balanced bowl full of flavor. The combination of rice, vegetables, and protein is finished with the creamy, slightly tropical touch of almond and coconut cream. A perfect option for a healthy meal that is easy to prepare.
Ingredients:
- 120 g rice (white or brown)
- 200 ml water
- 1 avocado
- 1 carrot
- ½ cucumber
- 1 handful of edamame or protein of your choice (chicken, salmon, or tofu)
- 2 tablespoons of almond and coconut cream
For the dressing
- 1 tablespoon extra virgin olive oil
- Juice of ½ lemon or lime
- Salt and pepper to taste
For the topping
- Sesame seeds
- Grated coconut
- Green sprouts (optional)
Preparation:
- Cook the rice with the water until done, then let it cool slightly.
- Meanwhile, cut the avocado, carrot, and cucumber into strips or cubes.
- Cook the chosen protein if needed, or prepare the edamame.
- Place the rice at the bottom of a bowl and add the vegetables and protein on top.
- In a small bowl, mix the almond and coconut cream with the olive oil, lemon or lime juice, salt, and pepper until you get a creamy sauce.
- Pour the sauce over the bowl and finish with sesame seeds, grated coconut, or green sprouts.
