Poke bowl with almond and coconut cream

A fresh, balanced bowl full of flavor. The combination of rice, vegetables, and protein is finished with the creamy, slightly tropical touch of almond and coconut cream. A perfect option for a healthy meal that is easy to prepare.

Ingredients:

  • 120 g rice (white or brown)
  • 200 ml water
  • 1 avocado
  • 1 carrot
  • ½ cucumber
  • 1 handful of edamame or protein of your choice (chicken, salmon, or tofu)
  • 2 tablespoons of almond and coconut cream

For the dressing

  • 1 tablespoon extra virgin olive oil
  • Juice of ½ lemon or lime
  • Salt and pepper to taste

For the topping

  • Sesame seeds
  • Grated coconut
  • Green sprouts (optional)

Preparation:

  1. Cook the rice with the water until done, then let it cool slightly.
  2. Meanwhile, cut the avocado, carrot, and cucumber into strips or cubes.
  3. Cook the chosen protein if needed, or prepare the edamame.
  4. Place the rice at the bottom of a bowl and add the vegetables and protein on top.
  5. In a small bowl, mix the almond and coconut cream with the olive oil, lemon or lime juice, salt, and pepper until you get a creamy sauce.
  6. Pour the sauce over the bowl and finish with sesame seeds, grated coconut, or green sprouts.
