A quick, light, and very versatile option for any time of day. Rice cakes are combined with the creaminess of almond butter and the freshness of fruit, creating a balanced, flavorful snack. Perfect for a healthy breakfast or afternoon snack.

Ingredients:

  • 2–4 rice cakes
  • 2 tablespoons of almond butter
  • 1 piece of fresh fruit (banana, strawberries, kiwi, or blueberries)

For the topping (optional)

  • Chopped nuts
  • Seeds to taste (chia or flax)
  • A drizzle of honey or agave syrup

Preparation:

  1. Place the rice cakes on a plate or flat surface.
  2. Spread the almond butter over each cake.
  3. Wash and slice the fruit into rounds or small pieces.
  4. Add the fruit on top of the cakes.
  5. If desired, finish with nuts, seeds, or a small drizzle of honey.
