Cheesecake with pistachio cream and matcha

Ingredients:
- 400 g cream cheese
- 2 eggs
- 150 g natural Greek yogurt
- Pistachio and matcha cream
- 40 g oat flour
- 2–3 tablespoons honey or agave syrup
- 1 teaspoon vanilla extract (optional)
- Toppings: chopped pistachios
Preparation:
- Preheat the oven to 180 °C.
- In a large bowl, mix the cream cheese with the Greek yogurt until smooth and creamy.
- Add the eggs and mix well until incorporated.
- Fold in the pistachio and matcha cream, the honey or syrup, and the oat flour. Mix until you have a homogeneous batter.
- Pour the mixture into a pan lined with baking paper.
- Bake for about 35 minutes until the cheesecake is set but slightly creamy in the center.
- Let cool to room temperature, then refrigerate for at least one hour before serving.
- Before serving, spread a little pistachio and matcha cream on top and sprinkle with chopped pistachios if desired.
