Cheesecake with pistachio cream and matcha

A creamy cheesecake with an original twist thanks to pistachio and matcha cream. This version uses simple, balanced ingredients to achieve a delicious dessert without giving up the taste of an authentic cheesecake. Perfect for enjoying a lighter sweet treat.

Ingredients:

  • 400 g cream cheese
  • 2 eggs
  • 150 g natural Greek yogurt
  • Pistachio and matcha cream
  • 40 g oat flour
  • 2–3 tablespoons honey or agave syrup
  • 1 teaspoon vanilla extract (optional)
  • Toppings: chopped pistachios

Preparation:

  1. Preheat the oven to 180 °C.
  2. In a large bowl, mix the cream cheese with the Greek yogurt until smooth and creamy.
  3. Add the eggs and mix well until incorporated.
  4. Fold in the pistachio and matcha cream, the honey or syrup, and the oat flour. Mix until you have a homogeneous batter.
  5. Pour the mixture into a pan lined with baking paper.
  6. Bake for about 35 minutes until the cheesecake is set but slightly creamy in the center.
  7. Let cool to room temperature, then refrigerate for at least one hour before serving.
  8. Before serving, spread a little pistachio and matcha cream on top and sprinkle with chopped pistachios if desired.
